The best food pairings for Mencia

When I scoured the website for existing pairings with mencia I was amazed how many dishes I’d suggested it with. It really is an incredibly versatile food wine.

For those of you who are not familiar with it it’s a grape variety which is grown in the Bierzo and Ribeira Sacra regions of north-west Spain and produces a vibrantly juicy red that reminds me of Beaujolais with a dash of Loire cabernet franc.

Cecina

Cecina is a really delicious deeply savoury cured smoked beef from the same region as mencia and goes brilliantly with it as you can see from this match of the week. So does chorizo and rough country hams

Almost any kind of grilled meat especially pork and lamb

Which makes it a good wine for a barbecue. That also applies to spiced meat like kebabs or these seftali

Hearty stews

The Spanish are not renowned for their vegetarian dishes so I’m thinking meat here. Robust dishes of pork and beans for example.

Empanadas

Again from the area they have these delicious tuna and red pepper pies called empanadas. Mencia would be good with the smaller Latin American version too

Sheep cheese

Mencia is a good all-rounder with cheese but especially hard sheep cheeses which are what you tend to find in the area.

Warm salads

I suggested mencia as a pairing with this warm lamb salad with a pea, mint and feta cheese dressing. It would be great with other warm salads too.

Pizza and pasta

Almost any kind of pasta with a meaty sauce. Spaghetti and meatballs for example. It’s the perfect pizza wine too.

Roast turkey

I know there are a lot of other great pairings for roast turkey but a vibrant mencia works surprisingly well with all the sides as I discovered one Christmas.

My favourite food pairings with Viognier

Viognier (pronounced vee-on-yee-ay) is a rich, exotically fruity white wine, sometimes achieving quite high levels of alcohol so what are the ideal foods to pair with it?

It generally goes well with the sort of ingredients and dishes that match well with chardonnay and oaked chenin blancs but with a spicier twist.

Viognier food pairings

* Top of my list would be mild creamy curries like kormas or spicy south-east Asian curries. Even curries made with curry powder work well as do spicy dishes with a hint of peach or apricot, echoing the flavours in the wine

* mild spicy noodle dishes like Pad Thai

* chicken salads with apricot, peach or mango like coronation chicken

* fruity chicken - and even lamb - tagines with apricot

* dishes with ginger, saffron and coconut

* chicken, pork or rabbit with creamy sauces, especially if the dish includes a dash of viognier itself like this springlike dish. More intensely flavoured viogniers can stand up to roast pork, chicken and turkey

* Rich shellfish dishes such as seared scallops, grilled lobster and baked crab, especially with a hint of spice

* creamy and buttery cheeses

* sweet root vegetables especially carrots, parsnips and sweet potatoes and spicy butternut squash

Note: Viognier’s original home is in the Rhône though oddly I don’t think it’s a great pairing for Mediterranean food. You also find great viogniers in California and Australia whose most noted specialist is Yalumba.

Viognier is also incorporated into rich white blends that would match similar dishes to the above (see this match of the week for example) - and also blended with Syrah/Shiraz though those would call for quite a different pairing

15 Easter wine pairings to learn by heart

If you're wondering what wines you should buy for Easter weekend here's quick guide to what I think are the best Easter wine pairings.

As with my previous ‘learn by heart’ posts it's a simple way to remember great food and wine matches at a busy time of year. There are of course other possibilities to which the links will guide you.

Colomba Pasquale and extra dry prosecco

Colomba Pasquale is the traditional Italian Easter cake and ‘extra dry’ prosecco perversely a slightly sweeter style that is perfect with sweeter things.

Lamb and rioja

You can drink so many red wines with lamb (Chianti and Cabernet being two other favourites) but rioja is such a crowd-pleaser. I’d go for a reserva myself.

Roast chicken (or turkey) and pinot noir

Hey, it’s spring (or supposed to be) so lighten up with a brighter, fruitier red. Pinot is perfect

Easter ham and Beaujolais

Baked or roast ham or gammon could also take a pinot but I’m rooting for a good Beaujolais like a Morgon

Duck and pinot

And yes, here’s pinot noir again! But you can’t find a better pairing with duck. Especially with peas.

Roast kid and Chianti

Kid would be a traditional Mediterranean choice for the Easter feast so I’d be inclined to go for an Italian, Greek or Portuguese red. Chianti is the easy-to-memorise option.

Salmon and chardonnay

Depends how you cook it but salmon pretty well always works with chardonnay. Especially en croute or in a creamy sauce. (If it’s smoked salmon try sauvignon blanc.)

Fish pie and Chablis

Maybe you’re planning a fish pie for Good Friday? Again chardonnay is a reliable match - I’d go for a Chablis.

Asparagus and Sancerre

There are major arguments over which wine suits asparagus best but Sancerre (or Pouilly Fumé) does it for me. Especially if goats cheese is involved. Other optionshere

Scrambled eggs and champagne (or cheaper fizz)

What else are you going to drink for Easter brunch? Seriously - eggs and bubbles is the way to go. (It works with eggs benedict too)

Torta pasquale (Italian spinach and ricotta pie) and Soave

Or any other smooth dry Italian white come to that. Like Gavi. Here's a lovely recipe from Gennaro Contaldo or, following the recommendation below, from Rachel Roddy. A great option for vegetarians.

Simnel cake and orange pekoe tea

Perfect combination!

Hot cross buns and marsala

I owe this one to the Italian wine buyer at M & S Jeneve Williams. (They have a really well-priced half bottle of marsala you should try which is no doubt why they came up with the suggestion!). Nice recipe here too.

Easter eggs and Brachetto d’Aqui

If you’re scoffing the remains of the kids’ Easter eggs this sweet, gently sparkling Italian red is hard to beat. But also hard to find, unfortunately. If you’re stumped try a rosato frizzante (pink prosecco by another name though they’re not allowed to call it that)

Lemon tart and late harvest riesling

Lemon tart can be tricky with wine - the more intensely lemony the tougher it is. The trick if you want to serve a dessert wine with it? Add cream either to the tart or a good splodge over the top. Late harvest riesling has the acidity to cope

The best food pairings for Zinfandel

Like most wines made from red grapes Zinfandel comes in a number of styles from light and juicy to blockbuster ‘killer’ zins but they have a common thread of ripe brambly fruit and in most cases a richness that makes them a good match for red meat and other hearty dishes, especially those with a hit of smoked chilli.

(It’s also used to make an off-dry style of rosé called white zinfandel - check out my post on rosé for that.

Here are my favourite pairings which also apply to Zin’s brother from another mother primitivo which comes from Southern Italy (though I’d probably go more for the Italian dishes with that).

What goes with Zinfandel

Barbecue, especially American barbecue

If it’s charred, sweet or spicy, most zins will work so think back ribs, brisket, spicy sausages - anything smoked or treated to a sweet or spicy marinade or rub. Recipes like this Texas-style BBQ beef brisket.

Turkey, especially Thanksgiving turkey

As you will know Thanksgiving and Christmas is not so much about the bird as the stuffing and the sides and a good zinfandel can take them all in its stride as I discovered a couple of years ago

Braises and stews

If it’s big and beefy and cooked long and slow - it’s one for zin. Think shortribs and ox cheek, even Mexican mole

Dirty’ burgers

Y’know, the kind piled up with cheese, bacon, onions, pickles, whatever. Zin can cope

Meaty pasta sauces and pasta bakes

I’m thinking particularly spaghetti (or tagliatelle) and meatballs or a beef shin ragu. Or anything with sausage in the sauce like this recipe for rigatoni with aubergine, sausage and zinfandel sauce (which needs a new picture, yes I know!). And a classic lasagna, obviously. Basically meat sauces with cooked tomato,

Meat-topped pizzas.

Maybe go for a slightly lighter style with these as it’s as much about the crust and the cheese. A bright gluggable zinfandel or primitivo

Baked, roast or stuffed aubergine/eggplant

Loves zin especially with baked dishes like a parmigiana

Portobello mushrooms

A good veggie option for zin (especially baked with garlic butter)

Black beans

Black bean soup, black bean chillis - actually any chilli con - or sin - carne

Cheese, especially blue cheese

Delicate goat cheeses apart zin is a brilliant all-rounder for a cheeseboard, especially with stronger cheeses, smoked cheese and blues. I particularly like it with Gorgonzola

The best food pairings for white rioja

White rioja is tricky when it comes to wine pairing as it comes in such contrasting styles. There are the crisp fresh unoaked white riojas which behave much like a sauvignon blanc and much richer barrel-fermented ones which can tackle more intensely-flavoured fish and meat dishes

The latter are more characteristic of the region but even these vary depending on the age of the wine. Young ones behave much like a chardonnay with food, older ones - and white rioja does age magnificently - more like a white Rhône

Here are some of my favourite pairings:

Crisp unoaked white rioja

simply grilled fish and shellfish

garlicky prawns or grilled squid

gazpacho

Spanish-style salads

Barrel-aged white riojas of 2-3 years old

almonds

serrano and other Spanish ham

salt cod dishes such as croquetas

menestra (spring vegetable stew) and other braised vegetable dishes

paella and other rice dishes with saffron

dishes with aioli (garlic mayonnaise)

white asparagus

tortilla and other savoury egg dishes

More mature barrel-aged riojas

rich fish dishes such as roast turbot

hake with garlic and clams

grilled tuna

robust fish stews

grilled lobster and other rich lobster dishes like this experimental dish of lobster and sweetcorn

roast chicken, turkey or guineafowl

sautéed chicken dishes with sherry

chicken or pork dishes with creamy sauces

grilled pork or veal chops

Full-flavoured sheeps cheeses like this rosemary coated ewe’s milk cheese
